New York Cheese Cake

450g cream cheese
3/4 cup sugar
1/3 cup milk or UHT whipping cream (sugar free)
2 eggs
1/2 cup sour cream or yogurt... See More
1/2 tbsp vanilla
2 tbsp plain flour
1 tbsp lemon juice
2 tbsp melted chocolate
(2) 1 1/4 cup of Digest cracker
70g melted butter

Methods:
1. Crack the cookies, add melted butter to mix with. Lay over the bottom of a baking mould and press firmly, and then put in the frige for at least 15 minutes.
2. Soften cream cheese at room temperature, dice it. Whisk with an egg whisk until mashy, add sugar and keep whisking to paste. Make sure there is no any lump of cream cheese. Add milk slowly to blend well.
3. Add egg one by one and stir well. Add sour cream, vanilla, flour, lemon juice, mix well. (methods 2 and 3 can be done by a food processor or a juice blender)
4. Pour the cream cheese mixture into the baking mould, and leave 3 tablespoons to mix with melted chocolate. Pour and swirl the chocolate mixture on cream cheese mixture. Use a small knife to draw curve in the mixture, the marble line will be made.
5. Preheat oven at 175�� for 15 minutes. Put baking mould in a bigger and deeper baking tray. Add boiling water in between baking tray and mould. Bath baking for 1 hour. Leave the baked cake in oven for 4-5 hours, and put in frige.
